Amidst all the current uncertainty, it can be difficult to see past the doom and gloom. Valentine’s Day, for many a day of joy and love, may seem a bit misplaced this year. But, as Viktor E. Frankl (prominent psychiatrist and Holocaust survivor) once said in his book Man’s Search for Meaning:
Instead of waiting to see what life deals out to us in 2021 and soaking in misgivings, we can create our own direction by answering the questions right there in front of us. And when we are able to keep our heads up above the water, we can be a source of stability and inspiration for others.
In which case, if anyone asks you ‘Are you celebrating Valentine’s Day this year?’ your answer will be ‘Yes!’

Mrs T’s Homemade Baileys
1 can full fat coconut milk
1 can light coconut milk
1/2 cup brown or coconut sugar
Bring to light boil then simmer for 8-10 minutes
Remove from heat and add:
1 cup espresso or strong coffee
1 cup of whisky or rum or brandy
a pinch of salt
We think this pairs perfectly with a cinnamon bun, or any of our baked treats for you and your loved one to enjoy!
